🇮🇹 Pappardelle Primavera
A vibrant pasta dish full of colorful spring vegetables and fresh flavor—perfectly light and satisfying!
Ingredients:
• 250 g pappardelle pasta
• 1 zucchini, sliced
• 1 carrot, julienned
• 1 red bell pepper, sliced
• 1/2 cup cherry tomatoes, halved
• 1/2 cup peas (fresh or frozen)
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1/4 cup grated parmesan
• Salt and black pepper to taste
• Fresh basil or parsley to garnish
Instructions:
1. Cook pappardelle in salted water until al dente. Reserve some pasta water, then drain.
2. In a large pan, heat olive oil and sauté garlic for 1 minute.
3. Add zucchini, carrots, bell pepper, and peas. Cook for 5–7 minutes until just tender.
4. Toss in cherry tomatoes and cooked pasta. Mix well, adding pasta water if needed.
5. Season with salt and pepper, sprinkle with parmesan, and garnish with herbs.
6. Serve warm and enjoy your taste of spring!
