Strawberries and Cream Cheesecake Cake 🍓🍰
This dessert combines the classic flavors of strawberries and cream cheese into a delightful cake that's perfect for any special occasion or just a sweet treat!
Ingredients:
For the Cake:
2 cups all-purpose flour
2 cups granulated sugar
1/2 cup unsalted butter, softened
1 cup sour cream
4 large eggs
2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 teaspoon salt
For the Cream Cheese Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
For the Strawberries:
2 cups fresh strawberries, hulled and sliced
2 tablespoons granulated sugar
1 tablespoon lemon juice
Instructions:
1. Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
2. Prepare the Cream Cheese Frosting:
In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, beating until the frosting is light and fluffy. Stir in the vanilla extract and salt.
3. Prepare the Strawberries:
In a medium bowl, toss the sliced strawberries with granulated sugar and lemon juice. Let them sit for about 10 minutes to macerate, allowing the juices to develop.
4. Assemble the Cake:
Once the cakes are completely cooled, place one cake layer on a serving plate or cake stand.
Spread a layer of cream cheese frosting over the top of the first cake layer.
Arrange a layer of the macerated strawberries over the frosting.
Place the second cake layer on top and spread a generous layer of cream cheese frosting over the top and sides of the cake.
Decorate the top of the cake with additional strawberries, if desired.
5. Serve:
Refrigerate the cake for at least 1 hour before serving to allow the frosting to set. Serve chilled for the best flavor and texture.
