8This is the way my mother and my grandmother always made their potato salad
Ingredients:
6 medium potatoes, peeled and cubed
3 hard-boiled eggs, chopped
½ cup diced celery
¼ cup finely chopped red onion
1 cup mayonnaise
1 tbsp yellow mustard
1 tsp salt
½ tsp black pepper
1 tsp apple cider vinegar
Paprika for garnish
Directions:
Boil potatoes in salted water until fork-tender (about 10–12 minutes). Drain and cool.
In a large bowl, combine potatoes, eggs, celery, and onion.
In a small bowl, mix mayo, mustard, vinegar, salt, and pepper.
Pour dressing over the potato mixture and gently fold until well coated.
Chill for at least 2 hours.
Sprinkle with paprika before serving.
