Easy Homemade Beef Noodle Soup Recipe
Ingredients:
1 lb beef stew meat, cut into 1-inch cubes
1 tablespoon cooking oil
1 large onion, chopped
2 celery stalks, chopped
3 cloves garlic, minced
8 cups beef broth
1 bay leaf
1 teaspoon fresh thyme, chopped
½ teaspoon salt
¼ teaspoon black pepper
8 oz egg noodles
Optional: 1 tablespoon Worcestershire sauce, 1 tablespoon tomato paste, or 1 tablespoon brown sugar
Chopped cilantro and crushed red pepper flakes for garnish
Directions:
Heat cooking oil in a large pot over medium heat. Add the beef stew meat and cook, turning occasionally, until browned on all sides this should take about 5 to 7 minutes. Remove the beef and set it aside.
In the same pot, toss in the chopped onion, celery, and minced garlic. Cook for about 3 to 4 minutes, or until the vegetables soften and become fragrant.
Pour in the beef broth, stirring to combine. Add the bay leaf, fresh thyme, salt, and black pepper. Bring the mixture to a simmer, then cover the pot. Let it cook for about 1 hour, allowing the beef to tenderize and absorb all the delicious flavors.
Stir in the egg noodles and cook according to the package instructions, usually around 8 to 10 minutes, until the noodles are perfectly tender.
If you’d like a little extra depth, stir in Worcestershire sauce, tomato paste, or brown sugar to taste. These optional ingredients will add a rich layer to the broth.
Discard the bay leaf and ladle the soup into bowls. For an extra kick, garnish with freshly chopped cilantro and a sprinkle of crushed red pepper flakes. Serve hot and enjoy!
