📌 Directions
1️⃣ Preheat & Prep
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
2️⃣ Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, and salt. Set aside.
3️⃣ Cream Butter & Sugar
In a large bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each. Stir in vanilla.
4️⃣ Combine Batter
Gradually mix in the dry ingredients, alternating with milk, beginning and ending with the flour mixture.
Fold in raspberries and lemon zest gently.

Divide the batter evenly between cupcake liners.
Bake for 18–20 minutes, or until a toothpick comes out clean.
Cool completely on a wire rack.
