Mozzarella-Stuffed Onion Rings with Garlic Butter
Ingredients:
For the Onion Rings:
2 large white onions
8 oz mozzarella cheese, cut into sticks
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
2 large eggs, beaten
1½ cups breadcrumbs (panko or regular)
1/2 cup grated Parmesan cheese
Vegetable oil, for frying
For the Garlic Butter Sauce:
1/4 cup unsalted butter
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1/4 teaspoon red pepper flakes (optional)
Salt, to taste
Directions:
Peel and slice the onions into 1/2-inch thick rings. Separate the rings and set aside.
Cut the mozzarella cheese into sticks that fit inside the onion rings.
Take two onion rings of similar size and place a mozzarella stick between them, forming a "sandwich." Repeat with remaining rings and cheese.
In a shallow bowl, combine flour, salt, pepper, garlic powder, and paprika.
Place beaten eggs in a second shallow bowl.
In a third bowl, mix breadcrumbs and Parmesan cheese.
Dredge each stuffed onion ring in the flour mixture, then dip into the beaten eggs, and finally coat with the breadcrumb mixture. Press gently to adhere.
Heat vegetable oil in a deep pan to 350°F (175°C). Fry the onion rings in batches for 2-3 minutes per side, or until golden brown. Remove and drain on paper towels.
For the garlic butter sauce, melt butter in a saucepan over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in chopped parsley, red pepper flakes (if using), and salt to taste.
Drizzle the garlic butter sauce over the fried onion rings before serving.
