Chorizo and Halloumi Pasta πΆοΈπ§π
Ingredients:
250g penne pasta π
1 tsp olive oil π«
1 red onion, finely chopped π§
2 garlic cloves, minced π§
2 tsp smoked paprika πΆοΈ
1 tsp dried oregano πΏ
225g halloumi cheese, cubed π§
200g chorizo, sliced π
500ml passata (or tomato puree) π
2 tsp sugar π¬
3 tbsp double cream (or heavy cream) π₯
50g Grana Padano (or Parmesan), grated π§
2 tbsp fresh parsley, chopped πΏ
Directions:
1. Letβs start by cooking the pasta! Bring a large pot of salted water to a boil. Toss in the penne pasta and cook according to the package instructions until itβs al dente. Donβt forget to reserve 1 cup of that tasty pasta cooking water before you drain it and set the pasta aside!
2. Time to sautΓ© those aromatics! Heat the olive oil in a large pan over medium heat. Add the chopped red onion and minced garlic, and sautΓ© for about 3-4 minutes until theyβre softened and fragrant. Your kitchen will smell amazing!
3. Letβs add a punch of flavor! Stir in the smoked paprika and dried oregano to coat the onions and garlic. Now, toss in the cubed halloumi and sliced chorizo. Cook for 5-7 minutes, stirring occasionally until the halloumi gets a lovely golden color and the chorizo is a bit crispy. Yum!
4. Now weβre making the sauce! Pour the passata into the pan and sprinkle in the sugar, stirring well to combine everything. Let it simmer for about 10 minutes so all those flavors can meld together beautifully. Donβt forget to stir in the double cream for that creamy goodness!
5. Time to combine and serve! Add the cooked penne pasta to the sauce, tossing it all together to get every noodle coated evenly. If the sauce feels a bit thick, donβt hesitate to splash in some of that reserved pasta water until you get your desired consistency. Finish it off by garnishing with grated Grana Padano and freshly chopped parsley.
