Ingredients:
For the Crust:
1 cup graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cream Cheese Layer:
8 oz cream cheese, softened
1/2 cup powdered sugar
1 cup whipped topping (like Cool Whip)
For the Lemon Layer:
2 cups lemon pie filling (store-bought or homemade)
For the Topping:
Whipped cream
Lemon slices (for garnish)
Powdered sugar (for dusting)
Directions:
Preheat and Prep: Set your oven to 350Β°F (175Β°C). Lightly grease an 8x8-inch baking dish or line it with parchment paper for easy removal.
Make the Crust: In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until evenly combined. The texture should feel like wet sand.
Bake the Crust: Press the mixture firmly into the bottom of your prepared dish, forming a flat, compact layer. Bake for 8β10 minutes until lightly golden and set. Let it cool completely before moving on.
Prepare the Cream Cheese Layer: In a large bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Gently fold in the whipped topping with a spatula until well blended. Be careful not to overmixβyou want it fluffy!
Layer It Up: Spread the cream cheese mixture evenly over the cooled crust using an offset spatula or the back of a spoon for a smooth finish.
Add the Lemon Goodness: Spoon the lemon pie filling over the cream cheese layer and gently spread it to the edges. Smooth the top for a clean look.
Chill Time: Refrigerate the bars for at least 2 hours, or until fully set and firm to the touch.
Finishing Touches: Just before serving, slice into neat squares or bars. Add a generous swirl of whipped cream, a sprinkle of powdered sugar, and a lemon slice on top for that fresh, citrusy flair.
