Pecan Pie Cookies
Ingredients:
- 1/2 cup unsalted butter, softened
- 1/3 cup brown sugar, packed
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
- 1/4 cup brown sugar, packed
- 2 tablespoons heavy cream
- 1/4 teaspoon vanilla extract
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, cream together the softened butter and 1/3 cup brown sugar until light and fluffy.
3. Add the egg yolk and 1 teaspoon vanilla extract, mixing well.
4. In a separate bowl, whisk together the flour and salt.
5. Gradually add the flour mixture to the butter mixture, stirring until a soft dough forms.
6. Roll tablespoons of dough into balls and place on a baking sheet lined with parchment paper, flattening them slightly.
7. In a small bowl, combine chopped pecans, 1/4 cup brown sugar, heavy cream, and 1/4 teaspoon vanilla extract to make the filling.
8. Spoon a small amount of the pecan filling onto the center of each cookie dough round.
9. Bake for 12-15 minutes, or until the edges are golden and the filling is bubbly.
10. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
