π₯©π§π§ Cheesesteak Tortellini in Rich Provolone Sauce
Ingredients
For the Cheesesteak Filling:
1 lb thinly sliced beef (ribeye or sirloin works best)
1 tbsp olive oil
1 small onion, thinly sliced
1 small green bell pepper, thinly sliced
2 cloves garlic, minced
Salt & pepper, to taste
Β½ tsp smoked paprika (optional)
For the Tortellini & Provolone Sauce:
12 oz cheese tortellini (fresh or frozen)
2 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1 cup shredded provolone cheese
Β½ cup grated Parmesan cheese
Β½ tsp Italian seasoning
Pinch of crushed red pepper flakes (optional)
Salt & pepper, to taste
Optional Garnish:
Chopped parsley or chives
Extra provolone or Parmesan
Sliced cherry tomatoes for color
Instructions
Step 1 β Cook Tortellini
Boil tortellini according to package instructions. Drain and set aside.
Step 2 β Cook the Cheesesteak Beef
Heat olive oil in a skillet over medium-high heat.
SautΓ© onions and bell peppers until softened, about 3β4 minutes.
Add garlic and cook 30 seconds more.
Add beef slices, season with salt, pepper, and smoked paprika. Cook until beef is browned and just cooked through. Remove and set aside.
Step 3 β Make the Provolone Sauce
In the same skillet, melt butter over medium heat. Add garlic and sautΓ© until fragrant (about 1 minute).
Pour in heavy cream, then stir in provolone and Parmesan until melted and creamy.
Add Italian seasoning and crushed red pepper flakes. Adjust salt and pepper to taste.
Step 4 β Combine Tortellini & Beef
Add cooked tortellini and beef/vegetable mixture to the sauce.
Toss gently to coat everything evenly in the rich provolone sauce.
Step 5 β Serve & Garnish
Plate tortellini and beef mixture.
Garnish with parsley, extra cheese, or cherry tomatoes.
Serve hot with a crisp side salad or garlic bread.
