CHICKEN CORDON BLEU STROMBOLI 🍗🍕🍷
This Chicken Cordon Bleu is a delightful twist on the Classic Cordon Bleu, combining all the rich flavours of the traditional dish wrapped in a pizza dough! ✨️

RECIPE - Serves 4
Ingredients 🛒
600g/1.3lbs Pizza dough or 2 base sheets
600g/1.3lbs Chicken Tenderloins
1 Large Onion, sliced
6-8 Slices Deli Ham
6-8 Slices Swiss Cheese
Chicken Seasoning
2 1/2 Tbsp Dijon Mustard
2 1/2 Tbsp Mayonnaise
1 Tbsp Butter, melted
1 Tsp Garlic Powder
1 Tsp Dried Parsley
2 Tbsp Parmesan Cheese
Salt & Pepper

Method:
Preheat oven to 200C/400F.
Season the chicken with chicken seasoning, salt and pepper.
In a little olive oil and butter, sear the chicken from both sides. Remove from pan and cut into bite sized pieces.
To the same pan, add the onions and cook until tender. Turn off heat and set aside.
On a floured surface, roll out the pizza dough into a large rectangle 12x15-inches or place 2 base sheets of pizza dough on top of each other and roll out to size mentioned. (It's much easier and quicker to roll out 2 sheets of pizza dough!)
In a small bowl, mix together the dijon mustard and mayonaise. Spread the mixture evenly over the dough, leaving a 1-inch border.
Layer the swiss cheese (2 slices on top of each other) down the center of the dough, followed by slices of ham (2 on top of each other).
Scatter half of the onions over the ham, followed by the chicken and remaining onions on top. (Chicken doesn't need to be in a single layer but placed on top of each other.)
Carefully fold the sides over each to seal the filling and pinch the ends together.
Place a large sheet of baking paper half way under the Stomboli and roll it onto the baking sheet seam side down. Tuck the ends underneath and transfer to a baking tray.
Brush the entire Stomboli with melted butter, generously sprinkle with garlic powder, dried parsley and parmesan cheese.
Bake in preheated oven for 30-45minutes, or until the crust is golden brown and crispy.
Remove from oven and let it rest for 5 minutes before slicing.
