Kulfi-Inspired Overnight Oats
Ingredients
1 cup rolled oats
1 ½ cups milk (dairy or non-dairy)
1 tablespoon chia seeds
2 tablespoons honey or maple syrup
½ teaspoon ground cardamom
¼ teaspoon vanilla extract
Pinch of salt
¼ cup chopped pistachios
¼ cup diced mango (fresh or frozen)
¼ cup shredded coconut (optional)
1. In a medium bowl, combine rolled oats, milk, chia seeds, honey or maple syrup, ground cardamom, vanilla extract, and a pinch of salt. Stir well to combine all ingredients.
2. Divide the mixture evenly into two jars or containers with lids.
3. Top each jar with chopped pistachios, diced mango, and shredded coconut if using.
4. Seal the jars and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and soften.
5. In the morning, give the oats a good stir and enjoy cold, or warm them in the microwave for about 30 seconds if preferred.
