Taco Ranch Bites
Ingredients:
- 1 pound lean ground beef
- 1 package (1 oz) taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chiles, with juices
- 2 cups sharp cheddar cheese, grated
- 1 bottle (8 oz) ranch dressing
- 5 packages (15 count each) frozen phyllo cup shells
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks.
3. Drain any excess fat, then stir in the taco seasoning mix and diced tomatoes with green chiles, including the juices. Simmer for 5 minutes to blend flavors.
4. Remove from heat and stir in 1 cup of the shredded cheddar cheese and about half of the ranch dressing until well combined.
5. Arrange the frozen phyllo cup shells on a baking sheet.
6. Spoon the beef mixture into each phyllo cup, filling them generously.
7. Sprinkle the remaining cheddar cheese over the filled cups.
8. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the phyllo cups are crisp.
9. Drizzle the remaining ranch dressing over the bites before serving or serve it on the side for dipping.
