Creamy Italian Sausage Tortellini
Ingredients:
1 lb Italian sausage (mild or spicy)
1 tablespoon olive oil
1 small onion, finely chopped
4 cloves garlic, minced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes (optional)
1 cup heavy cream
1 ½ cups shredded mozzarella cheese
1 package (20 oz) cheese tortellini (fresh or refrigerated)
Salt and black pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
1. Bring a large pot of salted water to a boil and cook the tortellini according to package directions until just al dente. Drain and set aside.
2. In a large skillet or deep pan, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up into crumbles.
3. Stir in onion and cook until soft, about 3–4 minutes. Add garlic and sauté until fragrant.
4. Pour in tomato sauce and diced tomatoes. Stir in Italian seasoning, red pepper flakes, salt, and black pepper. Simmer for 10 minutes to let flavors meld.
5. Reduce heat to low, stir in the heavy cream, and let the sauce thicken slightly.
6. Add cooked tortellini to the skillet and toss until well coated in the creamy tomato sauce.
7. Sprinkle mozzarella cheese evenly over the top. Cover with a lid and let it melt, or broil for 2–3 minutes until bubbly and golden.
8. Garnish with parsley and serve hot.
