🍊 Chocolate & Orange Shortbread Cookies 🍫
Ingredients:
For the Shortbread:
• 1 cup (225g) unsalted butter, softened
• 1/2 cup (100g) granulated sugar
• 1/2 tsp vanilla extract
• Zest of 1 large orange
• 2 cups (250g) all-purpose flour
• 1/4 tsp salt
• 1/2 cup mini chocolate chips or finely chopped dark chocolate
• 1/4 cup turbinado (raw) sugar, for rolling
Instructions:
1. Prepare the Dough:
1 In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy, about 2-3 minutes.
2 Mix in the vanilla extract and orange zest until well combined.
3 Gradually add the flour and salt, mixing on low speed just until the dough forms. Fold in the chocolate chips.
4 Divide the dough in half and shape each portion into a log about 2 inches in diameter. Wrap the logs tightly in plastic wrap and chill in the refrigerator for at least 1 hour, or until firm.
2. Roll and Coat the Dough:
1 Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
2 Spread the turbinado sugar evenly on a flat surface. Roll the chilled dough logs in the sugar, pressing lightly to adhere the sugar to the surface.
3. Slice and Bake the Cookies:
1 Slice the dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet about 1 inch apart.
2 Bake for 12-14 minutes, or until the edges are lightly golden.
3 Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
