Beef and Cheese Chimichangas

1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 cup tomato sauce
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
8 large flour tortillas
Vegetable oil for frying
Optional toppings: shredded lettuce, diced tomatoes, sour cream, guacamole, salsa

Directions:
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon.
2. Add the onion and garlic, cooking until softened, about 5 minutes.
3. Stir in the cumin, chili powder, paprika, salt, and black pepper, cooking for 1 minute.
4. Add tomato sauce and simmer for 5 minutes until slightly thickened.
5. Remove from heat and stir in shredded cheddar and Monterey Jack cheeses. Let cool slightly.
6. Warm the tortillas in the microwave to make them pliable.
7. Place about 1/3 cup of the beef mixture in the center of each tortilla, then fold in the sides and roll up tightly.
8. Heat vegetable oil in a large skillet to 350°F (175°C). Fry chimichangas in batches until golden, about 3-4 minutes per side.
9. Remove with tongs and drain on paper towels. Serve with toppings.
