This is a different way to serve fried chicken, and because Cornish Game Hens are small - 1 -2 lbs. - they are prefect to serve one hen per person. This is a basic #vintagerecipe for a fry batter, but you can kick it up by adding your favorite herbs and seasoning. Serve with some yummy sauces for dipping. Honey mustard, BBQ, spicy ranch, hot sauce... whatever flavor profile you enjoy. A fun spring holiday dinner.

2 Cornish game hens
2 egg, beaten
3/4 cup. milk
1 cup all-purpose flour (Kosher sub w/ potato starch or matzo cake meal)
