Cheesy Garlic Butter Beef Linguine with Alfredo Sauce
Ingredients:
1 pound linguine pasta
1 tablespoon olive oil
1 pound sirloin steak, cut into ½-inch cubes
4 tablespoons butter, divided
4 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes (optional, for a little kick!)
½ cup beef broth
½ cup heavy cream
½ cup grated Parmesan cheese, plus more for serving
¼ cup chopped fresh parsley
Salt and freshly ground black pepper to taste
2 cups Alfredo sauce (store-bought or homemade)
1/2 cup shredded Mozzarella cheese
1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
2 tablespoons fresh basil, chopped
Directions:
1. Cook the Linguine: Cook the linguine according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
2. Sear the Beef: While the pasta is cooking, heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the beef cubes and sear on all sides until browned and cooked to your liking. Season with salt and pepper. Remove the beef from the skillet and set aside.
3. Sauté Garlic and Seasonings: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic! Stir in the Italian seasoning.
4. Make the Sauce: Pour in the beef broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for a couple of minutes to reduce slightly. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
5. Combine and Finish: Add the cooked linguine to the skillet with the sauce. Toss to coat, adding a little of the reserved pasta water if needed to create a creamy consistency. Stir in the cooked beef, mozzarella cheese, sun-dried tomatoes, and parsley. Toss until everything is well combined and the cheese is melted and gooey.
6. Serve: Serve immediately, topped with extra Parmesan cheese and fresh basil. Enjoy!
