Mediterranean Power Salad
🥗🐟🍅🥚🫘🫒
Ingredients:
1 cup arugula or mixed greens
1/2 cup cherry tomatoes, halved 🍅
2 boiled eggs, halved 🥚
1/2 cup canned white beans, rinsed 🫘
1/4 cup Kalamata olives 🫒
2 small grilled or canned sardines 🐟
Chopped parsley for garnish 🌿
Olive oil, lemon juice, salt, pepper to taste 🍋🧂
Instructions:
1. Lay down a bed of arugula on a plate.
2. Arrange the tomatoes, eggs, beans, olives, and sardines on top.
3. Drizzle with olive oil and a splash of lemon juice.
4. Sprinkle with salt, pepper, and chopped parsley.
5. Serve fresh and enjoy!
