Cheesy Garlic Butter Ground Turkey & Tortellini Skillet
Ingredients:
1 pound ground turkey
1 large yellow onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can tomato sauce
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional, for heat)
Salt and black pepper to taste
2 cups chicken broth
1 (20 ounce) package refrigerated cheese tortellini
1 cup heavy cream
4 tablespoons butter
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley, for garnish
1/4 cup chopped fresh basil, for garnish
1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
Juice of 1/2 lemon
Directions:
1. In a large skillet, brown the ground turkey over medium-high heat. Drain off any excess grease.
2. Add the chopped onion and red bell pepper to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for another minute until fragrant.
3. Pour in the diced tomatoes (undrained) and tomato sauce. Season with salt and black pepper to taste. Bring to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally, to allow the flavors to meld.
4. Pour in the chicken broth and bring the mixture back to a simmer. Add the cheese tortellini and cook according to package directions, usually about 3-5 minutes, or until the tortellini are tender.
5. Stir in the heavy cream, butter, sun-dried tomatoes, and lemon juice. Reduce the heat to low and simmer for another 2-3 minutes, stirring occasionally, until the sauce has slightly thickened.
6. Remove from heat and stir in 3/4 cup of the mozzarella cheese and 1/4 cup of the Parmesan cheese until melted and creamy.
7. Top with the remaining mozzarella and Parmesan cheese. Cover the skillet and let it sit for a minute or two, until the cheese is melted and bubbly.
8. Garnish with fresh parsley and basil before serving.
