Ingredients:
Battered Cod

4 cod fillets (about 6 oz each)

1 cup cold sparkling water or beer
1 tsp baking powder

2 large onions, sliced into thick rings
1 cup all-purpose flour
1 cup buttermilk
Salt and pepper, to taste
Oil for frying
Optional Tartar Sauce

½ cup mayonnaise
1 tbsp pickles, finely chopped
1 tsp lemon juice
Salt and pepper, to taste
Instructions:
Prepare the Cod Batter: In a bowl, whisk together flour, cold sparkling water (or beer), and baking powder until smooth. Season the cod fillets with salt and pepper.

Prepare the Onion Rings: In a shallow dish, season flour with salt and pepper. In another bowl, pour the buttermilk. Dip each onion ring in the seasoned flour, then in the buttermilk, and back into the flour for an extra-crispy coating.

Fry the Onion Rings: Heat oil in a deep fryer or skillet to 375°F (190°C). Fry onion rings in batches for 2-3 minutes, or until golden and crispy. Remove and drain on paper towels.

Fry the Cod: Lightly dredge each cod fillet in flour, then dip into the batter, allowing excess to drip off. Carefully place in the hot oil and fry for 4-5 minutes, or until golden brown and crispy. Drain on paper towels.

Optional Tartar Sauce: In a small bowl, mix mayonnaise, chopped pickles, lemon juice, salt, and pepper for a quick tartar sauce.
