Peach Cobbler
Ingredients:
- 6 cups fresh peaches, peeled and sliced
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon juice
- 2 teaspoons cornstarch
For the topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/4 cup boiling water
- 1 teaspoon vanilla extract
Directions:
1. Preheat oven to 425°F (220°C).
2. In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently to coat peaches evenly.
3. Pour the peach mixture into a 9x13 inch baking dish.
4. In another bowl, mix the flour, sugar, baking powder, and salt.
5. Stir in melted butter, boiling water, and vanilla extract until just combined.
6. Drop spoonfuls of the topping mixture over the peaches, spreading slightly but leaving some gaps.
7. Bake in preheated oven for 25-30 minutes or until the topping is golden brown and bubbly.
8. Remove from oven and let cool slightly before serving.
