Keto Breakfast Casserole (Egg Bake)
Ingredients
12 large eggs
1 cup heavy cream (or unsweetened almond milk for lighter version)
1 lb breakfast sausage or ground beef (crumbled and cooked)
1 cup shredded cheddar cheese (or mozzarella/Monterey Jack)
½ cup diced bell peppers (optional, for flavor & color)
½ cup diced onion (optional)
2 cups fresh spinach (or kale, chopped)
2 tbsp butter or olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt & black pepper to taste
Instructions
Preheat oven:
Set oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook sausage & veggies:
In a skillet, cook sausage until browned. Remove and set aside.
In the same skillet, sauté onion and bell peppers in butter/oil until soft. Add spinach and cook just until wilted.
Make the egg mixture:
In a large bowl, whisk eggs, heavy cream, garlic powder, Italian seasoning, salt, and pepper.
Assemble casserole:
Spread sausage and veggie mixture evenly in the baking dish.
Pour egg mixture on top. Sprinkle with shredded cheese.
Bake:
Bake for 35–40 minutes, until eggs are set and top is golden brown.
Let cool 5–10 minutes before slicing.
