Creamy Spinach and Mushroom Lasagna
Ingredients:
8 lasagna noodles
2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
8 ounces mushrooms, sliced
10 ounces fresh spinach
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
15 ounces ricotta cheese
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 egg
2 cups marinara sauce
1/4 cup fresh basil, chopped (optional)

1. Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
3. Stir in the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.
4. Add the fresh spinach, oregano, salt, and black pepper. Cook until the spinach is wilted, about 2-3 minutes. Remove from heat and let cool slightly.
5. In a mixing bowl, combine the ricotta cheese, Parmesan cheese, egg, and the cooled spinach and mushroom mixture. Mix until well combined.
6. Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place 3 lasagna noodles over the sauce.
7. Spread half of the ricotta mixture over the noodles, followed by a layer of marinara sauce and a sprinkle of mozzarella cheese.
8. Repeat the layers with 3 more noodles, the remaining ricotta mixture, marinara sauce, and mozzarella cheese. Top with the final 2 noodles, the remaining marinara sauce, and the rest of the mozzarella cheese.
9. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
10. Let the lasagna cool for about 10 minutes before slicing. Garnish with fresh basil if desired.
