Strawberry Cake with Oreo Crumble & Cookies 'n Cream Icing
Ingredients:
- 2 1⁄2 cups all-purpose flour
- 2 1⁄2 tsp baking powder
- 1/2 tsp salt
- 1 cup butter, softened
- 2 cups granulated sugar
- 4 eggs
- 2 tsp vanilla extract
- 1 cup whole milk
- 1/2 cup strawberry purée
- 1/2 tsp red food coloring (optional)
- 1 cup chopped Oreo cookies
- 1 cup powdered sugar
- 2 tbsp butter, softened
- 1/4 cup heavy cream
- 1/2 tsp vanilla extract
- 1/4 cup crushed Oreos
- 1/2 cup chopped Oreo cookies (for topping)
- Extra icing drizzle
Directions:
Step 1: Preheat your oven to 350°F (175°C) and get a 9-inch cake pan ready by greasing and flouring it. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. In another bowl, cream the softened butter and granulated sugar until it turns light and fluffy. Now, add the eggs one at a time, ensuring everything is mixed well after each addition. Stir in the vanilla extract next. Gradually mix in the flour mixture, alternating with the milk and strawberry purée. If you're feeling adventurous, add the red food coloring for a pop of color! Finally, gently fold in those chopped Oreos to create a delicious mix-in.
