Apple Crumble Coffee Cake
Ingredients:
For the Cake:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup vegetable oil
1 egg
1/2 cup milk
1 teaspoon vanilla extract
1 large apple, peeled, cored, and diced
For the Crumble Topping:
1/2 cup brown sugar
1/3 cup all-purpose flour
1/2 teaspoon cinnamon
3 tablespoons unsalted butter, softened
Directions:
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
Make the cake batter: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. In another bowl, mix the vegetable oil, egg, milk, and vanilla extract. Add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the diced apple.
Prepare the crumble topping: In a small bowl, mix the brown sugar, flour, and cinnamon. Cut in the butter with a fork or pastry blender until the mixture is crumbly.
Assemble the cake: Pour the batter into the prepared pan. Sprinkle the crumble topping evenly over the batter.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cool and serve.
