🍋 What You’ll Need:
• 1 cup sugar
• ¼ cup cornstarch
• ¼ tsp salt
• 1 ½ cups water
• 4 egg yolks
• ¾ cup fresh lemon juice
• 1 tbsp lemon zest
• 2 tbsp butter
• 1 baked pie crust
• 4 egg whites
• ¼ tsp cream of tartar
• ½ cup sugar
🍋 Directions:
1️⃣ Combine sugar, cornstarch, salt, and water, then cook until thick.
2️⃣ Whisk in the egg yolks, cook for another minute, and stir in the lemon juice, zest, and butter. Let it cool.
3️⃣ Beat the egg whites with cream of tartar until stiff peaks form, then fold them into the lemon mixture.
4️⃣ Pour the mixture into the pie crust and bake at 325°F for 25-30 minutes.
5️⃣ Chill for 4 hours before serving!
