Cheesy Beef Taco dinner with Cauliflower rice.
Super easy, delicious and ready in less than 30 mins!
1lbs ground beef, or vension
1 can of diced tomatoes
1 cup frozen cauliflower rice (or fresh if you prefer)
2 cups of shredded cheese (divided) Monterey
Jack, mozzarella, cheddar or all three!
2 TBSP taco seasoning (I make my own)
1 TBSP Olive oil
1) Add olive oil to Dutch oven.
2) Add the ground meat & cook thoroughly.
3) Add seasoning.
4) Mix in your cauliflower rice.
5) Add 1 cup of cheese & stir in.
6) Pour can of tomatoes & mix.
7) Simmer for about 10 mins, or until cheese is melted.
7) Add the rest of the cheese & bake in the oven until cheese is melted. (Broil if necessary)
* you can add shredded tomatoes & sour cream
if you'd like.
This is a low carb/dirty keto meal.
