🍔🍠 Black Bean & Sweet Potato BBQ Burgers

Ingredients:
- 1 large sweet potato, baked and mashed (about 2 cups mashed sweet potato) (300g)
- 1 (15-ounce) can black beans, rinsed and drained (425g)
- 1/2 cup breadcrumbs (50g)
- 1/4 cup chopped red onion (30g)
- 2 tablespoons smoked paprika
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (30ml)
- Burger buns and desired toppings

Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, combine mashed sweet potato, black beans (mash slightly with a fork), breadcrumbs, red onion, smoked paprika, cumin, garlic powder, salt, and pepper. Mix well to combine.
3. Form mixture into 4-6 patties. Place on prepared baking sheet.
4. Drizzle with olive oil.
5. Bake for 20-25 minutes, flipping halfway through, until heated through and slightly firm.
6. Serve on burger buns with your favorite toppings.
