Just made these delicious Pickled Beets! 🥒🌶️ Tangy, sweet, and perfectly spiced - they're the perfect addition to salads, sandwiches, or enjoyed straight out of the jar!
Ingredients:
- 2 pounds beets, trimmed, peeled, and sliced
- 1 cup apple cider vinegar
- 1 cup water
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 1 teaspoon whole black peppercorns
- 1 teaspoon mustard seeds
- 2 cloves garlic, peeled
- Optional: fresh herbs such as dill or thyme
Directions:
1. In a large pot, combine apple cider vinegar, water, granulated sugar, salt, whole black peppercorns, mustard seeds, and peeled garlic cloves. Bring to a boil over medium heat, stirring until the sugar is dissolved.
2. Add the sliced beets to the pot and reduce the heat to low. Simmer for 20-25 minutes, or until the beets are tender when pierced with a fork.
3. Remove the pot from heat and let the pickling liquid cool slightly.
4. Transfer the pickled beets and pickling liquid to clean, sterilized jars. Add fresh herbs, if using.
5. Seal the jars tightly and store them in the refrigerator for at least 24 hours before serving.
