Slow Cooker Pot Roast with Mashed Potatoes 🥩🥕
Ingredients:
3 lbs beef chuck roast
1 lb baby carrots
1 onion, chopped
3 cloves garlic, minced
2 cups beef broth
2 tbsp Worcestershire sauce
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
Salt & pepper to taste
2 tbsp cornstarch + 2 tbsp water (for thickening)
For the Mashed Potatoes:
4 large potatoes, peeled & cubed
½ cup butter
½ cup heavy cream
Salt & pepper to taste
Directions:
1. Season the beef with salt and pepper, then sear it in a hot pan.
2. Place beef, carrots, onion, and garlic in a slow cooker.
3. In a bowl, mix beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary. Pour over beef.
4. Cook on low for 8 hours or high for 4-5 hours, until tender.
5. Mix cornstarch with water, stir into the slow cooker, and cook for 15 more minutes.
6. Meanwhile, boil potatoes until soft, drain, and mash with butter, cream, salt, and pepper.
7. Serve shredded pot roast over mashed potatoes with gravy.
