Ingredients:
- 1 cup dried red lentils
- 3 cups water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin powder
- Olive oil for sautéing

Directions:
1. Start by rinsing the lentils under cold water until the water runs clear.
2. In a saucepan, bring the rinsed lentils and 3 cups of water to a boil over medium heat. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the lentils are soft.
3. While your lentils are cooking, heat a bit of olive oil in a skillet over medium heat. Add the chopped onion and sauté until it's translucent, which should take around 5 minutes. Add the minced garlic for the last minute, stirring until fragrant.
4. After the lentils are done, drain any excess water if needed. Then, blend the cooked lentils together with the sautéed onions, garlic, and cumin powder until the mixture is slightly chunky.
5. Preheat a nonstick skillet over medium heat and lightly grease it with oil or butter. Pour in about half a cup of the lentil batter for each pancake. Cook until bubbles form on the surface, around 3-4 minutes. Flip the pancake and cook until it’s golden brown on the other side, about 2-3 more minutes.
6. Serve warm, topped with yogurt or your favorite sauce for an extra kick! Enjoy!
