My Nonna's Pizzelle
Ingredients:
- 3 large eggs
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted and cooled
- 1 tablespoon anise extract
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- Powdered sugar for dusting (optional)
Directions:
1. Preheat the pizzelle iron according to the manufacturer's instructions.
2. In a large bowl, beat the eggs and granulated sugar together until light and fluffy.
3. Stir in the melted butter and anise extract until well combined.
4. In a separate bowl, whisk together the flour and baking powder.
5. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
6. Drop about a tablespoon of batter onto the center of each pizzelle iron pattern.
7. Close the iron and cook for 30-45 seconds, or until the pizzelle are golden brown and crisp.
8. Carefully remove the pizzelle and place them on a wire rack to cool.
9. Once cooled, dust with powdered sugar if desired.
