🍪 Snickerdoodle Cookie Bars 🍪
Ingredients
For the Base:
170g (¾ cup) unsalted butter, melted and slightly cooled
150g (¾ cup) packed light brown sugar
200g (1 cup) granulated sugar
2 large eggs, at room temperature
2 tsp pure vanilla extract
250g (2 cups) all-purpose flour, spooned and leveled
1 tsp baking powder
1 tsp cream of tartar
½ tsp fine sea salt
For the Swirl Topping:
50g (¼ cup) granulated sugar
2 tsp ground cinnamon
Instructions
Prep & Preheat: Position a rack in the center of your oven and preheat to 175°C (350°F). Generously grease a 9x13-inch metal baking pan with butter or non-stick spray, then line it with parchment paper, leaving an overhang on the long sides for easy removal.
Create the Batter: In a large mixing bowl, whisk the melted butter, brown sugar, and granulated sugar together until the mixture is smooth and well combined, about 1 minute. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
Incorporate Dry Ingredients: Add the flour, baking powder, cream of tartar, and salt to the wet ingredients. Using a sturdy spatula or wooden spoon, gently fold the mixture together until just combined and no dry streaks remain. Avoid overmixing.
Layer & Swirl: Pour the thick batter into your prepared pan. Use the back of a spoon or an offset spatula to spread it into a smooth, even layer that reaches the corners. In a small bowl, combine the topping sugar and cinnamon. Sprinkle this mixture evenly over the entire surface of the batter.
Bake to Perfection: Place the pan in the preheated oven and bake for 20-25 minutes. The bars are done when the edges are lightly golden and the center is set—it should spring back lightly when touched. The topping will have melted and created a beautiful, crackly crust.
Cool & Serve: Transfer the pan to a wire rack and let the bars cool completely in the pan, for at least 1 hour. This is crucial for clean slices. Once cool, use the parchment paper overhang to lift the entire slab out of the pan. Place it on a cutting board and slice into 12 even squares or rectangles.
