Ingredients
For the Bowl:
4 slices halloumi cheese 🧀
2 hard-boiled eggs, halved 🥚
1/2 cup hummus 🥄
1 small baguette or crusty bread roll 🥖
For the Salad:
1 cup cherry tomatoes, halved 🍅
1/2 cucumber, diced 🥒
1/4 red onion, thinly sliced 🧅
1 tbsp fresh parsley, chopped 🌿
1 tbsp olive oil 🫒
1 tsp lemon juice 🍋
Salt and pepper to taste 🧂
Optional Garnish:
1 tsp black sesame seeds or nigella seeds 🌟

Prepare the Salad:
In a bowl, combine cherry tomatoes, cucumber, red onion, and parsley. Drizzle with olive oil and lemon juice, and season with salt and pepper. Toss to combine.
Cook the Halloumi:
Heat a non-stick skillet over medium heat. Sear the halloumi slices for 1-2 minutes per side until golden brown.
Assemble the Bowl:
In each bowl, add a serving of the salad, two slices of seared halloumi, half of the hard-boiled eggs, and a dollop of hummus.
Add the Bread:
Place the crusty bread roll or slices of baguette on the side.
Garnish & Serve:
Sprinkle black sesame or nigella seeds over the hummus and eggs for an extra touch. Serve immediately.
