Coconut Curry Chicken Meatballs
Ingredients:
1 lb ground chicken
1/2 cup breadcrumbs
1 egg
2 tablespoons curry powder
1 can (14 oz) coconut milk
1 tablespoon olive oil
Salt to taste
Directions:
Preheat oven to 375°F (190°C).
In a bowl, mix chicken, breadcrumbs, egg, curry powder, and salt. Form into meatballs.
Place meatballs on a baking sheet and bake for 20 minutes.
In a skillet, heat olive oil and coconut milk. Add cooked meatballs and simmer for 5 minutes. Serve warm.
