Elegant Boston Cream Dessert Bars
Ingredients:
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
1 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
2 cups milk
1/2 cup granulated sugar
1/4 cup cornstarch
4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
1 cup heavy cream
1 cup dark chocolate, chopped
Directions:
Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
In a bowl, mix flour, 1/2 cup sugar, baking powder, and salt. Add softened butter, eggs, and 1 teaspoon vanilla extract. Beat until smooth.
Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
In a saucepan, combine milk and 1/2 cup sugar. Heat over medium heat until the sugar is dissolved and the mixture is hot but not boiling.
In a separate bowl, whisk cornstarch and egg yolks until smooth. Slowly pour hot milk mixture into the egg mixture, whisking constantly.
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and begins to boil. Remove from heat and stir in 2 tablespoons butter and 1 teaspoon vanilla extract. Pour the custard over the cooled cake layer and refrigerate until set.
To make the ganache, heat heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour over the chopped dark chocolate. Let sit for 2-3 minutes, then whisk until smooth.
Pour the ganache over the set custard layer and refrigerate for at least 2 hours, or until the ganache is set.
Cut into squares and serve.
