Garlic Butter Steak Bites with Rich Creamy Fettuccine
Ingredients:
For the Garlic Butter Steak Bites:
1.5 lbs sirloin steak, cut into bite-sized cubes
2 tablespoons olive oil
4 tablespoons unsalted butter
5 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon onion powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
For the Creamy Fettuccine:
12 oz fettuccine pasta
1 tablespoon butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup cream cheese (optional, for extra creaminess)
Salt and pepper, to taste
1/4 teaspoon crushed red pepper flakes (optional)
Directions:
1. Cook the Pasta: Boil the fettuccine in salted water according to package directions. Before draining, reserve 1/2 cup of pasta water. Drain and set aside.
2. Sear the Steak Bites: Pat steak cubes dry with paper towels. Season with smoked paprika, onion powder, salt, and pepper.
Heat olive oil in a large skillet over high heat. Sear the steak bites in batches for 1–2 minutes per side until browned. Remove and set aside.
3. Make Garlic Butter: Reduce heat to medium. In the same skillet, melt butter and sauté minced garlic for about 30 seconds until fragrant. Add steak bites back into the pan and toss to coat. Turn off heat, sprinkle with parsley, and keep warm.
4. Prepare the Cream Sauce: In a separate skillet, melt 1 tablespoon butter and sauté garlic for 30 seconds. Stir in heavy cream and bring to a gentle simmer. Add Parmesan and cream cheese, stirring until melted and smooth.
Season with salt, pepper, and red pepper flakes. Thin with reserved pasta water as needed.
5. Combine & Serve: Toss cooked fettuccine in the creamy sauce until fully coated. Plate with garlic butter steak bites on top or to the side. Garnish with parsley and extra Parmesan if desired.
