Ingredients:
• 1 large eggplant, cubed
• 2 cups tomatoes, diced
• 1/4 cup capers
• 1/4 cup green olives
• 2 celery stalks, chopped
• 1 small onion, diced
• 2 tbsp olive oil
• 2 tbsp red wine vinegar
• 1 tbsp sugar
Salt & pepper

Instructions:
1. 🍆 Sauté eggplant cubes in olive oil until tender and golden.
2. 🧅 Add onion, celery, and cook until softened.
3. 🍅 Stir in tomatoes, capers, olives, sugar, and vinegar.
