Easy Creamy Garlic Sausage Fettuccine One-Pot Dinner

Ingredients:

12 oz fettuccine pasta
1 lb Italian sausage (casings removed)
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, diced
1 cup chicken broth
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning
Salt and pepper, to taste
1/2 cup sun-dried tomatoes, chopped
1/2 cup fresh spinach, chopped
1/4 teaspoon red pepper flakes (optional, for a little heat)
1/2 cup roasted red peppers, sliced
1/4 cup fresh basil, chopped (for garnish)
Freshly grated Parmesan cheese, for topping

Directions:

Heat olive oil in a large pan over medium heat. Add the sausage and break it up as it cooks. Cook for about 5–7 minutes, until browned.
Stir in the garlic and onion. Cook for 1–2 minutes until soft and fragrant.
Mix in the sun-dried tomatoes, roasted red peppers, and red pepper flakes (if using). Cook for another 2 minutes.
Pour in the chicken broth, then add the cream, Parmesan, garlic powder, and Italian seasoning. Stir well and let it simmer for a couple of minutes.
Add the fettuccine right into the pan. Cook for 10–12 minutes, stirring often, until the pasta is tender and the sauce is thick.
Add the chopped spinach and stir until wilted, about 1–2 minutes.
Taste and add salt and pepper as needed. Top with extra Parmesan and fresh basil if you like.
