Basil Garlic Shrimp with Spinach Penne
Sautéed Garlic Shrimp and Spinach Penne in Fresh Basil Sauce
Ingredients:
8 oz penne pasta
1 lb medium shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
3 cups fresh spinach, roughly chopped
1/2 cup fresh basil leaves, chopped
1/4 cup grated Parmesan cheese (or dairy-free alternative)
1/2 cup low-sodium vegetable or chicken broth
1 tablespoon lemon juice
1/4 teaspoon chili flakes (optional)
Salt and black pepper to taste
1 tablespoon pine nuts (optional garnish)
Directions:
Cook the penne pasta according to the package instructions. Reserve 1/4 cup of pasta water, then drain and set aside.
In a large skillet, heat olive oil over medium heat. Add shrimp and cook for 2–3 minutes per side until pink and cooked through. Remove shrimp from skillet and set aside.
In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Add chopped spinach and cook for 2–3 minutes until wilted.
Stir in broth, basil, lemon juice, and chili flakes. Simmer for 2–3 minutes.
Add cooked penne, reserved shrimp, and Parmesan cheese. Stir to combine, adding pasta water as needed to loosen the sauce.
Season with salt and pepper to taste. Garnish with pine nuts and more fresh basil if desired.
Serve warm and enjoy a fresh, flavorful pasta that’s both hearty and bright.
