Creamy Cajun Chicken Rotini with Garlic Parmesan Sauce

Ingredients:

4 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
1 tablespoon olive oil
3 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
12 oz rotini pasta
1/4 cup reserved pasta water
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:

Season the chicken pieces with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes until browned and fully cooked. Remove from the skillet and set aside.
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
Stir in mozzarella cheese and Parmesan cheese until melted and the sauce becomes creamy and smooth. Adjust seasoning with salt and pepper if needed.
Meanwhile, cook rotini pasta according to package instructions. Reserve 1/4 cup of pasta water, then drain.
Add the cooked pasta to the skillet with the sauce, tossing gently to coat. Use reserved pasta water to thin the sauce if needed.
Return the cooked chicken to the skillet and toss everything together until well mixed and heated through. Garnish with fresh parsley before serving.
