Ingredients:

For the Cake:

2 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

½ cup vegetable oil

1 ¾ cups granulated sugar

4 large eggs

1 tablespoon vanilla extract

1 cup buttermilk

1 ½ cups fresh strawberries, diced and tossed with 1 tablespoon flour

For the Whipped Cream Frosting:

2 cups heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

Optional Garnish:

Whole strawberries

Extra diced strawberries for filling

Directions:

Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter, Oil, and Sugar:
In a large bowl, beat the butter, oil, and granulated sugar together until light and fluffy, about 3–4 minutes.

Add Eggs and Vanilla:
Beat in the eggs one at a time, then mix in the vanilla extract until smooth.

Alternate Adding Dry Ingredients and Buttermilk:
Add the dry ingredients in three additions, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.

Fold in Strawberries:
Gently fold the floured strawberries into the batter.

Bake:
Divide the batter evenly between the two prepared pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on wire racks.

Make the Whipped Cream Frosting:
In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

Assemble the Cake:
Place one cake layer on a serving plate. Spread a generous layer of whipped cream over the top and sprinkle with extra diced strawberries if desired. Top with the second cake layer and frost the top and sides with the remaining whipped cream.

Decorate and Serve:
Garnish with whole strawberries. Chill for at least 30 minutes before slicing for best results.
