2 tbsp all-purpose flour
1-2 cups beef broth
Salt and pepper, to taste
Instructions
Prepare the Roast Beef: Preheat your oven to 450°F (230°C). Rub the beef roast with salt, pepper, olive oil, garlic, rosemary, and thyme.

Roast the Beef: Place the beef in a roasting pan and roast for 15 minutes, then reduce the oven temperature to 325°F (160°C) and continue cooking until the internal temperature reaches your desired doneness (135°F for medium-rare), about 1-1.5 hours. Rest the roast for 15-20 minutes before slicing.

Prepare the Yorkshire Puddings: Increase oven temperature to 425°F (220°C). Whisk flour, milk, eggs, and a pinch of salt until smooth. Let batter rest while heating a muffin tin with a small amount of beef drippings or oil in each cup. Once hot, pour batter into each cup and bake for 20-25 minutes until puffed and golden.

Roast the Vegetables: Toss potatoes and carrots with olive oil, salt, pepper, and fresh thyme. Arrange on a baking sheet and roast alongside the beef for 30-40 minutes or until tender and golden.

Make the Gravy: Place the roasting pan with beef drippings over medium heat. Whisk in flour, cooking for 1-2 minutes. Gradually add beef broth, whisking continuously until the gravy thickens. Season with salt and pepper.

Serve: Slice the roast beef, and serve with Yorkshire puddings, roasted potatoes and carrots, and a generous drizzle of gravy.
