Power Breakfast Bowl with Scrambled Eggs, Avocado & Berries
Ingredients:
2 large eggs
1 tablespoon milk or water
Salt and pepper to taste
1/2 ripe avocado, diced
1/4 cup mixed berries (strawberries, blueberries, raspberries, etc.)
1/4 cup rolled oats
1/4 cup milk (any kind)
1 tablespoon chia seeds (optional)
1 teaspoon honey or maple syrup (optional)
Optional toppings: chopped nuts, shredded coconut, a drizzle of honey or yogurt
Instructions:
1. Prepare the Oats: In a small bowl, combine rolled oats, milk, and chia seeds (if using). Let it sit for 5-10 minutes to soften. If you're short on time, you can skip this step and use cooked oatmeal instead.
2. Scramble the Eggs: In a small bowl, whisk together eggs, milk (or water), salt, and pepper. Heat a small non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are set but still slightly moist.
3. Assemble the Bowl: Divide the softened oats between two bowls (or one large bowl). Top with the scrambled eggs, diced avocado, and mixed berries.
4. Sweeten (Optional): Drizzle with honey or maple syrup if desired.
5. Add Toppings (Optional): Sprinkle with chopped nuts, shredded coconut, or a dollop of your favorite yogurt for extra flavor and texture.
