Ingredients:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
1 can cherry pie filling
Whipped cream and chocolate shavings for decoration
Preparation Steps:
Preheat the oven to 350Β°F (175Β°C) and grease and flour two 9-inch round cake pans.
In a large bowl, mix together flour, sugar, cocoa, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla to the flour mixture and mix well. Stir in the boiling water until the batter is smooth.
Pour the batter evenly into the prepared pans and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Once cooled, place one cake layer on a serving plate. Spread cherry pie filling over the layer and top with whipped cream.
Place the second cake layer on top and frost the cake with more whipped cream. Decorate with chocolate shavings and cherries.
Chill the cake before serving for the flavors to meld.
Notes:
To enhance the cherry flavor, you can also soak the cake layers with a bit of cherry syrup before layering on the cherry filling.
Adjust the sweetness by adding more or less sugar to the whipped cream.
Remember to refrigerate any leftovers to keep the cake fresh.
