Easy Vegan Quinoa Flax Pizza Crust for a Wholesome Meal 🍕🌿

Ingredients:
1 cup (6 oz / 170g) uncooked quinoa, rinsed well and soaked overnight
1/4 cup (1.25 oz / 35g) ground flaxseed
1/4 cup (2 fl oz / 60ml) water (plus more if needed)
2 tablespoons nutritional yeast (optional)
1 tablespoon olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon salt

Directions:
1. Ensure quinoa has been soaked for at least 8 hours or overnight. Drain it very thoroughly.
2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.
3. Combine the drained soaked quinoa, ground flaxseed, 1/4 cup water, optional nutritional yeast, olive oil, Italian seasoning, and salt in a food processor or high-speed blender.
4. Blend until a thick, smooth batter forms. If it's too thick to spread, add another tablespoon or two of water and blend again.
5. Pour the batter onto the prepared parchment paper. Spread it out thinly and evenly into your desired pizza shape (circle or rectangle) using an offset spatula. Aim for about 1/4 inch (6mm) thickness.
6. Bake for 20-25 minutes, until the crust is set, dry to the touch, and lightly golden around the edges.
7. Remove from the oven. Add your pizza sauce and toppings.
8. Return to the oven and bake for an additional 10-12 minutes, until toppings are hot and bubbly.
9. Let it cool for a few minutes before cutting and serving.
