Comforting Ginger and Garlic Broth with Tender Noodles
Ingredients:
- 8 oz rice noodles or soba noodles
- 1 tbsp sesame oil
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp chili flakes (optional)
- 1 cup baby spinach leaves
- 1/2 cup thinly sliced green onions
- Fresh cilantro, for garnish
Directions:
1. Cook the noodles according to package instructions. Drain and set aside.
2. Heat sesame oil in a large pot over medium heat. Add garlic and ginger, sautéing until fragrant, about 1-2 minutes.
3. Pour in the vegetable broth and bring it to a gentle boil. Stir in soy sauce, rice vinegar, and chili flakes if using.
4. Reduce heat and simmer for 5 minutes to allow the flavors to meld.
5. Add the spinach and let it wilt in the broth for about 1 minute.
6. Divide the cooked noodles into serving bowls and ladle the hot broth over the top.
7. Garnish with green onions and fresh cilantro before serving.
