Ingredients:
- 12 oz (340 g) pasta (gluten-free if preferred)
- 2 cups mushrooms, sliced
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup plant-based milk
- 1/2 cup vegetable broth
- 2 tablespoons nutritional yeast
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley for garnish

Directions:
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Sauté onions, garlic, and mushrooms until soft.
3. Sprinkle flour over the mushroom mixture and stir. Slowly pour in plant-based milk and vegetable broth, stirring until the sauce thickens.
4. Add nutritional yeast, smoked paprika, salt, and pepper. Cook for another 5 minutes.
