Creamy Cajun Butter Chicken with Roasted Broccoli Penne
Spicy Cajun Chicken Penne in Creamy Butter Sauce with Roasted Broccoli
Ingredients:
2 chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 cup heavy cream
1/4 cup butter
1 tablespoon garlic, minced
1/2 cup Parmesan cheese, grated
1 cup penne pasta, cooked al dente
1 cup broccoli florets, roasted
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Preheat your oven to 400°F (200°C). On a baking sheet, toss broccoli florets with olive oil, salt, and pepper. Roast for 20-25 minutes or until crispy and tender.
Heat olive oil in a large skillet over medium heat. Add the chicken pieces and Cajun seasoning, cooking for 6-7 minutes until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the garlic and sauté for 1 minute.
Pour in the heavy cream, stirring constantly until the sauce begins to thicken.
Stir in the Parmesan cheese, mixing until smooth. Season with salt and pepper to taste.
Add the cooked penne pasta and roasted broccoli to the sauce. Toss to coat evenly.
Add the cooked chicken back into the skillet and stir to combine everything.
Serve immediately, garnished with fresh parsley.
